Coffee is a crop. Like cereals, nuts and spices, it can grow moulds that make toxins, often in warm, humid conditions.
After picking, beans must be dried below 12.5% moisture. Leave them damp too long and ochratoxin A can start to form. Damp warehouses re-wet them too: above 80% humidity, stored coffee soaks up water again. Roasting destroys most of that toxin. Not all of it.
UK law caps ochratoxin A at 5 micrograms per kilo in roasted coffee, but does not require roasters to test against that limit. We sent ours to an independent lab and publish the full report.
