You've blamed yourself for years. Cut back. Switched to decaf. Maybe tried an adaptogen coffee or mushroom blend. Nothing worked because nobody addressed the actual problem: the coffee itself.
Most brands add ashwagandha and mushroom extracts to spray-dried instant coffee - trying to calm down a cortisol spike they caused in the first place. The base is still cheap, untested instant coffee loaded with the same contaminants that made you jittery.
Mycotoxins from mould (especially ochratoxin A) increase oxidative stress and inflammation - which makes anxiety worse. Instant coffee carries higher acrylamide levels and more acidity than freshly roasted specialty beans. Pesticide residues compound the stress response. Your nervous system isn't reacting to caffeine. It's reacting to everything else in the cup.
Ochratoxin A and aflatoxins in untested coffee trigger cortisol and oxidative stress. Your body reads it as danger. Heart races, hands shake, anxiety builds. Adaptogens don't remove these compounds - they just try to mask the response.
Spray-dried instant coffee (the base in most adaptogen blends) is more acidic than freshly roasted specialty beans and carries higher acrylamide levels. That gut irritation amplifies the jittery, anxious feeling throughout your body.
600+ compounds can survive processing. They don't disappear when you brew. Most brands don't publish contaminant testing. Neither does your supermarket. We test ours independently.
